WELCOME!

WELCOME TO MY BLOG!
For a while now, I have been posting my montly menus on Facebook. Well, I decided to create a blog so that more people will have the opportunity to check in and hopefully be inspired. As for the name of the blog, Sherri's Sanity, that is what montly menu planning is for me; my sanity. With 3 young kids, I do NOT have the patience for the clock to turn 5 and have no plan for dinner, it just adds to the craziness to the "witching hours" (those insane hours at the end of the day where we, moms, try to jam-pack 4 hours worth of stuff into 2) I HATE the hours of 5pm-8pm. BUT I have found that in my (almost) year of planning monthly menus, I have been so much less of a headcase during that time. When mom is happier, hubby and kids are happier. AND their tummies will be filled with yummy homemade food; even better!!Now, this blog will definitely take time to put together. Once again, I am a mother of 3 small kids and although I wish I could just sit down and crack it all out, that just isnt going to happen. So, check back often and I will try and keep things rolling. :) Another thing that fills my bucket, so to speak, is crafting! So I'm sure that will come along on the blog shortly too. Peanut butter,banana, chocolate chip protein muffins

I created this muffin recipe with the desire to get my kids more protein at breakfast. It contains cottage cheese but don't be scared!! You can neither taste it or detect the texture!

2 C whole wheat flour
1/4 C flax meal
3/4 cup lowfat, small curd cottage cheese
1 C peanut butter
1 ripe banana
2 eggs
1/4 C honey
1/4 C milk
1/3 C oil
1/2 tsp vanilla
1 tsp baking soda
Semi sweet chocolate chips to your liking :)

Mix everything except chips with a counter top or hand mixer until well mixed.  Stir in chips by hand. Drop by ice cream scoop into greased muffin pan. Bake in a preheated oven at 350 for 14ish min.

Fast and Dirty

While I do love to cook and eat fancy-ish foods, I can definitely appreciate a thrown-together-in-10-minutes meal. My friend calls this "Fast and Dirty" so I will too! 

It's basically ramen noodles with a bunch of added stuff. For my family of 6 I use 4 packs of ramen plus the water it calls for. You can add basically anything in any amount, but I like to use

A few handfuls of frozen, pre-cooked chicken strips
Broccoli
Frozen corn
Frozen peas and carrots
2 eggs (whisk these quickly as you add to boiling pot!)
Top with sriracha

Just throw it all in and boil for about 4-5 min! BOOM! Fast and dirty :)
