1 1/2 lb (costco package) ground turkey
1/3 C Panko crumbs
1 egg
S&P
1 Tbs dried onion
1 tsp garlic powder
Red pepper flakes (optional, to taste)
Mix all together and form by 1/2 cup into patties, grill

WELCOME TO MY BLOG!
For a while now, I have been posting my montly menus on Facebook. Well, I decided to create a blog so that more people will have the opportunity to check in and hopefully be inspired. As for the name of the blog, Sherri's Sanity, that is what montly menu planning is for me; my sanity. With 3 young kids, I do NOT have the patience for the clock to turn 5 and have no plan for dinner, it just adds to the craziness to the "witching hours" (those insane hours at the end of the day where we, moms, try to jam-pack 4 hours worth of stuff into 2) I HATE the hours of 5pm-8pm. BUT I have found that in my (almost) year of planning monthly menus, I have been so much less of a headcase during that time. When mom is happier, hubby and kids are happier. AND their tummies will be filled with yummy homemade food; even better!!Now, this blog will definitely take time to put together. Once again, I am a mother of 3 small kids and although I wish I could just sit down and crack it all out, that just isnt going to happen. So, check back often and I will try and keep things rolling. :) Another thing that fills my bucket, so to speak, is crafting! So I'm sure that will come along on the blog shortly too. Happy planning!!!

"Twisted Noodles" (Ground turkey stroganoff) Plus Instant Pot instructions
1 1/2 lb (Costco package) of ground turkey
1 C sour cream
2 cans cream of mushroom soup
2 tsp Worchestershire
1/2 C beef broth
onion powder
garlic powder
S&P
1 bag extra wide egg noodles
Season the ground turkey with a shake of onion powder, garlic powder, salt and pepper and brown in a large skillet. In the meantime, boil your egg noodles.
Add the rest of ingredients to the meat (minus noodles) stir and simmer for 10 min. Serve over egg noodles. Easy peasy.
Instant pot directions....
Brown the turkey with seasonings, then add all ingredients plus 4 C beef broth.
Cook 7 min high pressure and quick release.

Peanut butter,banana, chocolate chip protein muffins
I created this muffin recipe with the desire to get my kids more protein at breakfast. It contains cottage cheese but don't be scared!! You can neither taste it or detect the texture!
2 C whole wheat flour
1/4 C flax meal
3/4 cup lowfat, small curd cottage cheese
1 C peanut butter
1 ripe banana
2 eggs
1/4 C honey
1/4 C milk
1/3 C oil
1/2 tsp vanilla
1 tsp baking soda
Semi sweet chocolate chips to your liking :)
Mix everything except chips with a counter top or hand mixer until well mixed. Stir in chips by hand. Drop by ice cream scoop into greased muffin pan. Bake in a preheated oven at 350 for 14ish min.

Fast and Dirty
While I do love to cook and eat fancy-ish foods, I can definitely appreciate a thrown-together-in-10-minutes meal. My friend calls this "Fast and Dirty" so I will too!
It's basically ramen noodles with a bunch of added stuff. For my family of 6 I use 4 packs of ramen plus the water it calls for. You can add basically anything in any amount, but I like to use
A few handfuls of frozen, pre-cooked chicken strips
Broccoli
Frozen corn
Frozen peas and carrots
2 eggs (whisk these quickly as you add to boiling pot!)
Top with sriracha

Potato cream cheese soup (crockpot)
2 boxes dry hash browns (Costco) plus the water it calls for
3 cans chicken broth
1 block (8oz) cream cheese, cubed
1 Tbs dry onion
1 tsp dry parsley flakes
1 tsp garlic powder
1 C chopped, cooked bacon
Cook on high for 4 hours or medium for 6

BBQ Chicken Salad
My mom sent me home with some leftover BBQ chicken after the 3 day weekend festivities and it makes for a perfect quick salad for dinner. Here's what I put in mine...
Romaine lettuce
leftover BBQ chicken, cubed
Raw sweet corn off the cob
Bacon
Hard boiled eggs, cubed
Avocado
Shredded cheese
Use each in a quantity to your liking :)
For the dressing mix 2 parts ranch with 1 part BBQ sauce.

Homemade biscuits
I am obsessed with homemade biscuits!! I basically do everything the same as the recipe above except I mix it all in my food processor like this!
I put in all the dry ingredients and the butter and blend until it's kinda grainy. Then, I add the milk slowly through the spout on top while the blades are running until it's dough. Easy peasy!! Follow the rest of the instructions on the website.
*Mine don't usually get very brown even when they're done so be careful to not overcook because they won't be as yummy and moist!! I would say 18 min is closer to how long you should cook them.
I have even frozen the uncooked pucks with success!! Just thaw on the counter until room temp :)
